Sinigang na Baboy
A variation of the filipino sour soup made with pork, cabbage and tomatoes
Ingredients
1 lb. bonless pork shoulder
3 cloves garlic, crushed
1 med. onion, sliced
2 tbsp. cooking oil
1 1/2 tsp. salt
1/4 tsp. black pepper
2 big tomatoes, sliced
1/3 cup lemon juice
1 tbsp. patis (fish sauce)
1 lb. cabbage, chopped
1 cube tamarind bouillon
12 cups water
Directions
Cut pork in 1-inch cubes. In a deep pot, saute garlic, onion, and meat in the cooking oil. Add water, tamarind bouillon, salt, and pepper. Bring to a boil and simmer for 1 hour until meat becomes tender.
Stir in tomatoes, lemon juice, and fish sauce. Cover and simmer for 10-20 minutes. Add cabbage and cook for 10 minutes.
